Lucky Rainbow Chex Mex

If your kids are anything like mine, when it comes to a bowl of Lucky Charms cereal…they go for the “charms” first and honestly, most of the time, that’s all they want to eat! Well, I found a recipe online to create a Lucky Rainbow Chex Mex snack, and it came out pretty good…and it was super easy to make!

It’s a colorful, crunchy snack and will certainly satisfy any sweet tooth. We made it as a St. Patrick’s Day treat, playing off it’s rainbow properties, but this would be a great addition for any colorful occasion…perhaps a rainbow or unicorn themed party…or a fun treat to brighten up any day.

Here’s how I did it…

1 box of Lucky Charms cereal (11.5 oz. box)
1 box Rice or Corn Chex (6 cups)
White Chocolate Chips (2-12 oz. bags)
Multicolored sprinkles

1. Pick out ALL the marshmallows from the Lucky Charms cereal and set aside. The kids are great to help with this, how appealing does that bowl full of charms look… 🙂

2. Line a cookie sheet with foil or waxed paper. Put the Chex Mex in a Large Bowl and white chocolate in a separate microwave-safe bowl. Then melt chips in the microwave for a couple minutes and stir.

3. Pour melted chips over cereal and toss evenly to coat. Then, spread the mixture out on the cookie sheet and cover with candy sprinkles. Let it stand for 20 minutes or until the white chocolate has hardened.

4. Break up the mixture into smaller pieces and toss all the marshmallows back in, and it’s ready to eat! Store Lucky Rainbow Chex Mex in an air-tight container to keep it fresh, enjoy!
